Banana Bread Recipe

2 cups mashed very ripe banana, about 4 large ½ cup cane sugar or brown sugar ½ cup melted butter or vegetable oil, plus more for the pan 2 large eggs 1 teaspoon vanilla extract 1½ cups all-purpose flour, spooned and leveled 1 teaspoon baking soda ½ teaspoon sea salt ½ teaspoon cinnamon ¼ teaspoon nutmeg ½ cup chopped walnuts, plus 2 tablespoons for topping

Heat your oven to 350°F and grease a loaf pan (either 8x4 inches or 9x5 inches).

In a big bowl, mix together mashed banana, sugar, butter, eggs, and vanilla.

In a smaller bowl, mix flour, baking soda, salt, cinnamon, and nutmeg.

Put the dry ingredients into the big bowl with the wet ingredients and stir gently until mixed. Don't stir too much. Add in ½ cup of walnuts.

Pour the batter into the loaf pan and sprinkle the remaining 2 tablespoons of walnuts on top.

Bake for 50 to 60 minutes. To check if it's done, stick a toothpick into the loaf—if it comes out clean and the top feels firm, it's ready.

If the top is getting too brown, cover it with foil and continue baking.
