Ingredients

Preheat your oven to 375°F (190°C).

Rinse the chicken inside and out, then pat it dry with paper towels. Season the inside of the chicken with salt and pepper.

In a small bowl, mix together the minced garlic, lemon zest, lemon juice, olive oil, thyme, paprika, onion powder, and rosemary.

Rub the garlic and lemon mixture all over the outside of the chicken, making sure to get it under the skin as well.

Place the chicken in a roasting pan, breast side up.

Roast the chicken in the preheated oven for about 1 hour and 30 minutes or until the internal temperature reaches 165°F (74°C) in the thickest part of the thigh.

If the skin is getting too brown, you can tent the chicken with foil for the last 30 minutes of cooking.
