Heat the oven to 425 degrees F (220 degrees C). Line a large baking sheet with parchment paper or aluminum foil.

Prepare the broccoli by cutting the broccoli florets from the thick stalks, leaving about an inch of stalk attached to the florets.

Place the broccoli onto the baking sheet in a single layer. Add the sliced garlic and drizzle with olive oil.

Bake until tender and the tips of some of the florets are slightly browned, 20 to 25 minutes.

Remove the broccoli from the oven and immediately toss with the grated cheddar cheese.
