Homemade Pasta Carbonara with Bacon

1 pound (450g) spaghetti 2 tablespoons olive oil 4 ounces (115g) pancetta or guanciale, diced 3 large eggs 1 cup (about 100g) freshly grated Pecorino Romano cheese 1 cup (about 100g) freshly grated Parmesan cheese 2 cloves garlic, minced (optional) Freshly ground black pepper, to taste

Ingredients

Cook the spaghetti in a large pot of salted boiling water according to the package instructions until al dente.

While the pasta is cooking, heat olive oil in a large skillet over medium heat. Add diced pancetta or guanciale and cook until crispy and golden brown.

In a bowl, whisk together the eggs, Pecorino Romano, and Parmesan cheeses until well combined.

Once the pasta is cooked, drain it and immediately add it to the skillet with the pancetta or guanciale.

Remove the skillet from heat and quickly pour the egg and cheese mixture over the pasta.

Season with salt and a generous amount of freshly ground black pepper. Toss again to distribute the flavors.

Garnish with chopped fresh parsley and serve immediately.
