Soup Recipes for the Cold Weather

2 tablespoons olive oil 1 onion, finely diced 2 carrots, peeled and sliced 2 celery stalks, finely chopped 3 cloves garlic, minced 1 zucchini, diced 1 yellow squash, diced 1 cup green beans, trimmed and cut into bite-sized pieces 1 can (14 ounces) diced tomatoes 6 cups vegetable broth 1 teaspoon dried thyme

Ingredients

Heat olive oil in a large pot over medium heat. Add finely diced onion, sliced carrots, and finely chopped celery.

Add minced garlic and sauté for an additional 1-2 minutes until fragrant.

Stir in diced zucchini, yellow squash, green beans, diced tomatoes, vegetable broth, thyme, oregano, bay leaf, salt, and pepper.

Bring the soup to a boil, then reduce the heat to low. Simmer for 20-25 minutes or until the vegetables are tender.

If using pasta, add it to the soup and cook according to package instructions.

Taste the soup and adjust the seasoning with more salt and pepper if necessary. Remove the bay leaf.

Ladle the hot soup into bowls, garnish with finely chopped fresh parsley if desired, and serve.
